Happy Pancake Day everyone! When I was younger I’d only ever really have pancakes on the one allocated day of the year (one of the best days of the year), however for the past 2 years or so I’ve gradually increased my pancake consumption, some might say to a dangerous level, however who doesn’t love pancakes, right?!

I always associated pancakes with the classic crepe style, however I now follow various recipes, a lot of them vegan and most end up with a smaller fatter style or a ‘puffy’ look. I also love pancakes due to the endless possibly of toppings, healthy or unhealthy I love throwing whatever on there, mostly fruit, and creating a glorious combination. My most common toppings are banana, berries, peanut butter, honey, cinnamon, chocolate sauce, mixed seeds, mango, apricots, dates.. the list goes on.

So here on this sacred day I’m going to share with you my most favourite recipes I use. Now please note I’m not taking credit for these recipes, I’m no chef nor do I experiment in the kitchen. (the pictures don’t correspond with the recipes, I tend to forget which one I’ve used-sorry!)

One of the first recipes I came across was from the gorgeous girls Selina and Katie , they’re both vegan and share a lot of the recipes they use on their YouTube channel. Their recipe calls for:

  • 1/2 cup of blended oats
  • 1 cup of flour
  • 1 banana
  • 1-2 cups of water (as needed)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

You can find the full recipe on their YouTube here, it makes lovely pancakes that are fluffy but not too big and are available to everyone!

I also often use a basic and healthier recipe taken from the amazing Lauren Bill. This girl is amazing and a huge fitness inspiration! Her recipe is for those fitness junkies and so simple! It calls for:

  • 1 scoop of your preferred protein powder
  • 2 egg whites or 1 egg
  • 1/2 cup of oats
  • water or unsweetened almond milk

These recipes are from my beautiful friend Lucy! She has her own blog catering for those with intolerance’s or allergies such as gluten or lactose. This girl has major talent when it comes to baking/cooking and her blog has wonderful recipes! She has a blog post all about pancake recipes and they’re all amazing and simple! My favourite consists of:

  • 60g oats
  • 115ml dairy free milk
  • 1/2 mashed banana

Now this final recipe is a more unhealthy one and more time consuming (however a great workout for your arms). It comes from the well-known Zoella or Zoe Sugg, and she actually made a blog post about them here. I believe she took the recipe from Jamie Oliver. This one calls for more traditional ingredients and makes ‘puffier’ pancakes. If you are wanting an indulgent treat or something to fill you up give these a try! They comprise of:

  • 3 eggs separated with the whites whisked
  • 1115g plain flour
  • 1 heaped teaspoon baking powder
  • 140ml milk (I used soya)
  • 1 pinch of salt
